Plazma cupcakes with red berries and white chocolate

80 g butter
160 g sugar
1 tablespoon vanilla sugar
1 egg
1 vanilla bean
180 g buttermilk
170 g flour
1 teaspoon baking powder
100 g Plazma
100 g red currants and strawberries
FILLING:
150 ml whipping cream
200 g white chocolate
Decoration:
30g Plazma
30 g red currants or strawberries
30 g white chocolate
1. Step
Preheat the oven to 180°C.
2. Step
Line the muffin tray with baking paper cups.
3. Step
Beat the softened butter with sugar and vanilla sugar, then add the egg and mix well. Cut the vanilla bean lengthwise, scrape out the seeds with the tip of a knife and add them to the mixture.
4. Step
After that, add buttermilk, flour and baking powder and mix everything well so that the mixture becomes uniform and airy. At the end, add Plazma crushed into smaller pieces, and fruit. Mix it well with a spatula and spread it evenly in the paper cups that you lined the tray with. Put the tray in the oven for 20 minutes. Remove the baked muffins from the mold and place them on a kitchen rack to cool.
5. Step
Beat the whipping cream. Melt the white chocolate over steam or in the microwave and combine it with the whipped cream
6. Step
Pour the resulting filling into a piping bag and pipe the cupcakes. For decoration, if desired, you can use Plazma, fruit or melted white chocolate.
