Pears poached in vanilla and black tea with Plazma filling

Pears:
4 smaller pears
1l water
350 g sugar
2 bags black tea
1 vanilla bean
illing:
50 g Ground Plazma
2 tablespoons ground hazelnuts
25 g butter
Decoration:
50 g chopped roasted hazelnuts
250 ml whipping cream
1. Step
Peel the pears, but do not remove the stems.
2. Step
Pour water, sugar and tea bags into a saucepan, then put it on the stove until the water boils.
3. Step
Open the vanilla bean, scrape out the seeds with a knife and put them in the pot. Add the vanilla bean to the pot as well, for the aroma.
4. Step
When the water boils, take out the tea bags, put in the pears and cover. Simmer them over low heat until they soften, then carefully remove them along with the vanilla bean. Increase the heat and continue to cook the syrup until it thickens a little.

In a separate bowl, mix Ground Plazma, ground hazelnuts and melted butter. Add a couple of spoons of the boiled syrup in which the pears were cooked and mix everything well to get a crumbly mixture.

Cut the cooled pears in half, remove the cores with the seeds and fill them with the Plazma filling.

Pour the syrup over the pears and serve with whipped cream sprinkled with chopped hazelnuts.
