Caramel Plazma Panna Cotta

Ingredients:
10 g gelatin
600 ml whipping cream
2 tablespoons sugar
1 vanilla bean
30 g Ground Plazma
200 g sugar
200 ml whipping cream
150 g butter
Decoration:
50 g Plazma
1. Step
Pour gelatin into a small bowl, cover with half a glass of cold water and let it swell.
2. Step
Pour whipping cream into a saucepan together with sugar and the vanilla bean and heat it to about 40 degrees. Remove from heat and add gelatin.
3. Step
Pour this mixture into 4 glasses so that they are half full, add a layer of Ground Plazma, then spread the rest of the mixture on top. Place the glasses in the refrigerator for 3-4 hours for the mixture to set.
4. Step
Heat up whipping cream. Melt sugar over low heat. As soon as the sugar melts, remove from heat and slowly add whipping cream, stirring constantly to prevent lumps from forming. Add butter cut into small pieces and mix until everything is combined.
5. Step
Transfer to another bowl and let cool to room temperature.
6. Step
Pour caramel over cooled Panna Cotta and decorate with Plazma.
