Frangipane tart with pears

For the tart:
130 g room temperature butter
180 g flour
3 egg yolks
70 g Ground Plazma
60 g powdered sugar
For the frangipane:
100 g Ground Plazma
100 g almond flour
100 g crystal sugar
120 g room temperature butter
2 eggs
4 pears
Decoration:
Vanilla ice cream
Almond flakes
Ground Plazma
1. Step
Mix flour, Ground Plazma and sugar in a larger bowl.
2. Step
Cut the butter into cubes and add it to the flour.
3. Step
Knead the dough while adding one egg yolk at a time until it becomes homogenous.
4. Step
Grease a tart pan with a removable bottom with oil.
5. Step
On a floured surface, roll out the dough with a rolling pin to a thickness of 3 mm.
6. Step
Transfer the dough and press it into the mold. Prick it with a fork, then let it sit.
7. Step
Beat butter, almond flour, Ground Plazma and crystal sugar with a mixer until frothy, then add eggs. Beat until the mixture is homogenous.
8. Step
Fill the tart with frangipane.
9. Step
Peal the pears and cut them into slices.
10. Step
Arrange them in a circle on top of the frangipane and press them into the surface.
11. Step
Bake the tart at 160°C, for 30-40 minutes, until it turns golden yellow.
12. Step
Cool the tart to room temperature.
13. Step
Before serving, add a scoop of ice cream, almond flakes and Ground Plazma.
