Sponge:
250 g egg whites
300 g crystal sugar
1 tablespoon starch
Juice of ½ lemon
Filling:
300g Mascarpone cheese
250 g white chocolate
350 g whipping cream
150 g Ground Plazma
1. Step
Melt the whipping cream and white chocolate for the filling and leave them to cool.
2. Step
For the sponge, beat the egg whites until stiff, then add sugar, one spoon at a time, until the sugar melts and you get stiff peaks.
3. Step
Add a tablespoon of starch and lemon juice and combine with a spatula.
4. Step
Spread this mixture on a lined baking tray and bake for 30 min at 165 °C.
5. Step
Beat the cooled chocolate with a mixer, add Mascarpone and combine with Ground Plazma.
6. Step
Transfer the baked sponge immediately onto a kitchen cloth by turning it upside down.
7. Step
Remove the baking paper, wait for a minute or two, then spread the filling over the entire sponge.
8. Step
Roll it up and decorate as desired.
9. Step
Leave in the fridge for a few hours before serving.
