Plazma Louis XV

350 g Plazma
100 g powdered sugar
50 g butter
50 g chocolate cream
Filling:
2 eggs
130 g sugar
350 ml whipping cream
10 g gelatin
50 ml water
200 g dark chocolate
1. Step
Crush Plazma into a bowl. Add powdered sugar, melted butter and chocolate cream, and combine everything well into a crumbly mixture. Line the bottom of a cake mold with this mixture and put in the refrigerator so that the crust hardens, while you prepare the cream.
2. Step
Pour gelatin into a small bowl, cover with cold water and leave it to swell. Pour 30 ml of whipping cream, 30 g of sugar and 2 egg yolks into a medium-sized saucepan and cook over steam, stirring constantly. Remove from heat and add the melted gelatin.
3. Step
Beat the remaining whipping cream to get whipped cream and add it to the egg yolk mixture.
4. Step
After that, add the melted dark chocolate and mix well. Beat the egg whites and the remaining sugar into a stiff batter, then slowly add this mixture to the chocolate cream so that the batter does not fall flat.
5. Step
Take the mold out of the fridge and cover the Plazma crust with chocolate cream. Return the cake to the refrigerator for 2-3 hours to allow the chocolate filling to set.
6. Step
Decorate the cake with chocolate and fruits.
