Strawberry lemon cake

Sponge:
7 egg whites
140 g sugar
70 g flour
50 g Ground Plazma
Grated lemon zest
Topping:
150 ml milk
2 sachets vanilla sugar
Cream:
600 ml milk
7 egg yolks
100 g crystal sugar
100g flour
250 g butter
Grated zest of 2 lemons
100 g Ground Plazma
150 g strawberries
Decoration:
200 ml whipping cream
100 g Ground Plazma

1. Step
Line a 21 cm round mold with a removable bottom with baking paper by lining both the bottom and the edges.
2. Step
Whip the egg whites with the sugar.
3. Step
Add flour, Ground Plazma, lemon zest and mix with a spatula.
4. Step
Pour the dough into the mold and bake at 150 °C, for 20 minutes.

While the sponge is baking, boil the milk and vanilla sugar and leave to cool.
6. Step
Pour milk over the baked sponge and let the sponge absorb it.
7. Step
Place milk in a large metal bowl to steam.
8. Step
Mix egg yolks, sugar, flour, and lemon zest and pour in the milk once it boils.
9. Step
Cook until it thickens.
10. Step
Add butter to the cooked cream and stir with a whisk until the butter melts and combines with the cream.
11. Step
Add Ground Plazma and leave the cream to cool.
12. Step
When the cream has cooled completely , mix it with a whisk and spread over the sponge.
13. Step
Clean and dice the strawberries, arrange them on top of the cream and pat them down.
14. Step
Beat the whipping cream, mix with Plazma and spread evenly over the cake.
15. Step
Decorate with strawberries.
