Plazma cake with chocolate and forest berries

Ingredients:

6 eggs

75 g sugar

70 g Ground Plazma

60 ml oil

60 ml milk

40 g cocoa powder

 

CHOCOLATE FILLING:

180 ml whipping cream

150 g chocolate

30 g butter

50 g Plazma Choco

 

FILLING FOR COVERING THE CAKE:

250 ml whipping cream

70 g Ground Plazma

60 g sour cream

 

FRUIT FILLING:

4 tablespoons of the filling for covering the cake

50 g thawed forest berries

 

GLAZE:

80 g whipping cream

80 g chocolate

Decoration:

The remaining filling for covering the cake

50 g Plazma Čoko

1. Step

Preheat the oven to 180°C.

2. Step

Line two 18 cm diameter round molds with baking paper and leave aside.

3. Step

Separate the egg whites from the yolks and beat them into a stiff batter. In a separate bowl, beat the egg yolks with oil and sugar until they are just combined, then add Ground Plazma, cocoa powder and milk and combine everything into a smooth mixture.

4. Step

Add this mixture to the beaten egg whites and mix gently so that everything is well combined. Pour the mixture evenly into the previously prepared molds and put it in the oven for 25-30 minutes.

5. Step

To check if the sponges are baked, insert toothpicks into the center of the sponges. If the toothpick is dry when you remove it, the sponge is ready. Take the baked sponges out of the oven and place them on a rack to cool. When they are completely cooled, remove the baking paper and cut them crosswise so that you get 4 sponges out of 2.

6. Step

While the sponges are cooling, prepare the chocolate filling. Heat the whipping cream until it boils, remove from heat and add the crushed chocolate and butter. Let it sit for a minute or two, then mix it with a mixing spoon until you get a completely smooth thinner mixture. Let it cool down to room temperature, and then beat it with a wire whisk so that the mixture gains volume and becomes thicker. Add chopped Plazma Choco and set aside.

7. Step

Beat the whipping cream into stiff whipped cream, then add Ground Plazma and sour cream. Take 4 tablespoons out, put them in a separate bowl and mix with forest berries.

8. Step

When everything is ready, place a spoonful of the filling for covering the cake on a tray to ensure that the cake stays in place and start arranging: the first sponge, half of the chocolate filling, the second sponge, the filling for covering the cake, the fruit filling, the third sponge, the second part of the chocolate filling and at the end the fourth sponge. Cover the cake with the filling you prepared fot that, and pour the rest of it into a piping bag with a star nozzle to decorate the cake later. After that, put the cake in the fridge for 30 minutes to cool.

9. Step

During this time, prepare the glaze. Bring the whipping cream to a boil, then remove from heat and add the crushed chocolate. Let it sit for a minute or two, then mix it to get a completely smooth frosting. Cool the glaze to room temperature and pour it over the cooled cake. When the icing has set, decorate the cake with the filling that you poured into a piping bag and Plazma Choco.
