Chocolate pancakes with raspberries

Pancakes:
4 whole eggs + 1 egg yolk
250 ml milk
50 ml sparkling water
30 ml oil
120 g flour
15 g cocoa
Filling:
200 g Mascarpone cheese
200 ml whipping cream
100 g cocoa cream
200g fresh raspberries
100 g Ground Plazma
Decoration:
100g melted cocoa cream

1. Step
Beat the whole eggs and the egg yolk with a whisk.
2. Step
Add milk and combine with the eggs.
3. Step
Mix flour and cocoa and add to the mixture.
4. Step
Mix well with a whisk and add oil and sparkling water.
5. Step
Mix with a whisk until the batter is without lumps.
6. Step
Heat a pan and cook 15 cm diameter pancakes.
7. Step
Whip the whipping cream and leave aside.
8. Step
Combine Mascarpone and cocoa cream, add whipped cream and Ground Plazma and mix with a spatula.
9. Step
Place the cream in the center of cooled pancakes, arrange a few raspberries as desired, then fold one side and then the other without rolling.
10. Step
Repeat the process until you have used all the pancakes and all the cream.
11. Step
Decorate the pancakes with melted Nutella as desired and add a few more fresh raspberries.
